Carmel Apple Pancake Cupcakes

Yields:  Dozen+ Cupcakes

My prize-winning Carmel Apple Pancake Cupcake recipe. We attended a “Chopped” party a while back and I had to bring/invent a dessert recipe using the following three ingredients; apples, pancake batter, and pretzels. This is what I came up with and it turned out surprisingly good! Not only were they great tasting but they were the winner of the dessert round and a prize. If you like breakfast food, pancakes, carmel apples, or cupcakes, this is for you. These are sweetly simple to make and they taste great. This would be a great recipe to use for breakfast when you have guests over. The only differences between these Carmel Apple Pancake Cupcakes and those gross store-bought muffins are that these are basically “fancy pancakes”, they are homemade, they are delicious, and well the list goes on. -Cupcakes Ingredients-

3 cups of pre packaged “Buttermilk Pancake Mix”
3 Green Apples
Cinnamon
Brown sugar

Steps:

-Mix pancake batter as usual.
 -Pour batter into a greased muffin tin.
 -Peel and chop apples in 1/2 inch squares. In a bowl, toss apples, brown sugar, and cinnamon.
 -Add apple mix to the top of the pancake batter.

BAKE:

For 15-20 minutes at 350 degrees.

-Carmel Frosting Ingredients-

 1 package of Fat Free Cream Cheese, room temperature
 2 Sticks of Butter, room temperature
3-4 Cups of Powdered Sugar
1/2 cup Carmel Sauce

Steps:

-Cream butter and cream cheese until light and fluffy. Add Carmel and mix well. Gradually combine powdered sugar.

Frost cupcakes and top with a pretzel :)
To make more cupcakes, use 4-5 cups of pancake mix and 1-2 more green apples.
