Dark Chocolate Cookies.

Dark Chocolate Cookies

Yield: Makes about 20

What You Will Need:

1 1/2 cups Bittersweet Chocolate Chips, divided (About 9oz.)

1/2 cup Cocoa Powder 

3 large Egg Whites

2 1/2 cups Powdered Sugar, divided

1 tablespoon Cornstarch 

1/4 teaspoon Salt

Nonstick Vegetable Oil Spray

*Preheat oven to 350°

Spray you baking sheet with nonstick spray.

Step ONE:

Melt 1 cup chocolate chips in glass bowl in microwave. Microwave in 30 second intervals, and stirring in between each setting. About 2 minutes.

Step TWO:

Using electric mixer, beat whites in large bowl to soft peaks. Gradually beat in 1 cup sugar. Continue beating until mixture resembles marshmallow creme.

Step THREE: 

Whisk 1 cup sugar, cocoa, cornstarch, and salt in medium bowl and blend.

Step FOUR:

On low speed, beat dry ingredients into meringue.

Step FIVE:

Stir in lukewarm chocolate and 1/2 cup chocolate chips.

Step SIX:

Place 1/2 cup sugar in bowl. Roll dough into 1 inch round balls; roll in powdered sugar.

Step SEVEN:

Bake until the cookies’ tops crack, about 8-10 minutes.
